Easy Paleo Meals 014: Rotisserie Chicken Salad

This one’s dedicated to Roy who recently asked for a quick chicken salad he could take to work for lunch.


Saute 1 sliced onion + 1 can of fire-roasted tomato + shredded rotisserie chicken*

Salad = greens + shredded purple cabbage + cilantro +  grape tomatoes + avocado + lime juice + olive oil + chicken/onion/tomato

*The rotisserie chicken is a time saver, but you could cook your own chicken separately.

  1. Thanks so much Steph. This looks great. Hope your ready for the open, bad news for me, shoulder injury gonna need surgery next month, guess Froning , Bridges and the guys are safe this year. LOL!

    • You’re very welcome! I’m sorry to hear that about your shoulder but glad to hear you are taking it in with a sense of humor! What exactly is injured if you don’t mind me asking?

      • I have a boney protuberance on the end of my clavicle pushing down on a tendon, I have to get that bone shaved or cut away or the bone will eventually rupture the tendon leading to a major reconstruction surgery. Hopefully it will not set me back to much.
